Crab cocktail

Crab cocktail is a great appetizer - - because it looks delicious and is colorful, light and served cold.

Ingredients

1 3⁄4 cups crab (cooked and flaked)
2 cups lettuce (Romaine or Cos lettuce, shredded)
1⁄2 cup tomato ketchup (tomato ketchup)
1⁄2 cup horseradish (horseradish sauce)
2 tablespoons orange juice
1⁄4 teaspoon salt
1⁄2 teaspoon sugar
2 teaspoons mustard (prepared)

Instructions

  1. Process all ingredients for the sauce - ketchup, horseradish sauce, orange juice, salt, sugar, and mustard - in the blender. Transfer to a bowl and chill until needed.
  2. Check the crab meat to remove any remaining bits of shell. Chill.
  3. To serve, arrange the shredded lettuce in seafood cocktail cups, distribute the crab meat on top and spoon some sauce over the crab, 2-3 Tbs should be enough.

Notes

If you don't like it so spicy, try mayonnaise or one of its variations.

For a quick thousand islands sauce, substitute horseradish sauce with the same amount of mayonnaise and omit mustard.
