Watermelon and Mint Salad

A quick, refreshing and coloful summer salad to have as a snack or side.

Ingredients

1⁄2 watermelon (chopped)
1 onion (red onion, thinly sliced)
  mint (chopped, to taste)
  feta cheese (crumbled, to taste)
1⁄2 cucumber (optional, sliced or diced)
1 cup lettuce (rinsed and shredded)
3 tablespoons olive oil
1 lemon (the juice)
  salt (to taste)

Instructions

Mix the watermelon, cucumber  and onion first, then add the cheese. Add lettuce if using.

Mix thoroughly the olive oil and lemon juice, adding salt, if you use it. 

Pour the dressing over the salad. Toss the salad and finally sprinkle the mint on top.

Notes

Peel the cucumber or eat it with skin, as you like it.

Add some lettuce, rinsed and chopped, if you wish.

Some people serve the salad without dressing finding the salad flavor more refreshing this way.
