Sweetcorn cake

Another Brazilian cake for lazy cooks. All the ingredients can be mixed in the blender.

Ingredients

1 1⁄2 cups corn (sweet corn, fresh, frozen or canned and drained)
1 1⁄2 cups cooking oil (vegetable oil, corn or sunflower)
1 1⁄2 cups milk (whole milk)
3 egg
1 1⁄2 cups hominy
1 1⁄2 cups sugar
1 tablespoon baking powder

Instructions

  1. Heat the oven to 375º F. Grease and flour a rectangular baking pan.
  2. Put corn, oil, milk and eggs in the blender. Blend until smooth.
  3. Add hominy, sugar and baking powder. Blend again.
  4. Pour the batter into the prepared pan.
  5. Bake until done, about 45 minutes.
  6. Remove the sweetcorn cake from the oven and allow to cool.
  7. Cut into squares and serve.

Notes

This cake can be served still warm or at room temperature.
