Sweet and sour French beans

An easy recipe to flavor canned green beans.

Ingredients

1 can green beans (or green beans, 16 oz can, drained)
1⁄2 cup orange juice (or pineapple juice)
3 tablespoons vinegar (cider vinegar, up to 2 tablespoons, if you like the sweet side)
1 tablespoon sugar
2 pinches salt
2 teaspoons cornstarch
  orange zest (optional, as garnish)

Instructions

In a microwave glass bowl, mix French beans, juice, vinegar, salt and sugar until blended. Cook on high for 2-3 minutes, stirring a couple of times.

Add French beans and stir to coat. Microwave on high for 3-4 minutes, or until beans are hot, stirring once.

Spoon beans into a warm serving dish. Garnish with grated orange zest, if using, and serve.

Notes

If you don't have canned green beans, use 3 cups frozen beans, thawed in the microwave. Alternatively, cook fresh beans.

Microwave French beans

Wash 1 lb fresh French beans, trim ends, and cut into 2 inch pieces. Place in a glass baking dish, add 4 tablespoons water, cover and microwave on high for 7-8 minutes, stirring once. Proceed with recipe as normal.
