Sambal oelek is a chile paste made of pounded or chopped fresh red chiles flavored with salt, a little sugar and vinegar. It´s pure chile flavor.
While it's easy to find jars of sambal oelek in grocery stores, you can also make this condiment at home.
Place the chopped chiles, salt, sugar, and vinegar in a food processor or mortar and pestle. Blend or pound the ingredients until they form a coarse paste. Use or store.
Store the sambal oelek in a jar in the refrigerator. It should keep for about a month.
Sambal oelek is a very hot paste, a little goes a long way. If sensitive to heat, dilute the paste with vinegar, water or soy sauce.
