Mushroom soup

A delicious soup that will make you feel warm.

Ingredients

1 tablespoon butter
1 tablespoon flour (all purpose)
1 1⁄4 cups broth (chicken broth or chicken stock)
1 1⁄4 cups milk (whole milk)
8 ounces mushroom (finely chopped)
1 tablespoon parsley (chopped)
1 tablespoon lemon
2 tablespoons cream (light cream)
  seasoning (salt and ground pepper to taste)

Instructions

  1. Place butter, flour, chicken broth, milk, chopped musrooms and parsley into a large saucepan.
  2. Heat over a moderate heat and bring to the boil, whisking continuously.
  3. Season with salt and pepper, reduce heat, cover and simmer for 10 minutes.
  4. Remove the soup from the heat.
  5. Mix in the lemon juice and cream.
  6. Serve at once.
