Layered leeks and potatoes Italienne

One would think leeks, potatoes, garlic and sage would not marry well. The truth is the flavors blend beautifully.

Ingredients

2 pounds potato (thinly sliced)
2 leek (small, ends trimmed, washed and thinly sliced)
2 cloves garlic (thinly sliced)
4 ounces cheese (sliced)
1 bunch sage (fresh, shredded)
  seasoning (salt and white pepper to taste)
1 1⁄2 cups cream (light cream, single cream)

Instructions

Preheat oven to 400° F (200° C). Grease an ovenproof dish.

Layer potatoes, leeks, garlic and sage in the dish.

Pour cream over the top and finish with a layer of mozzarella.

bake for 30-40 minutes, until the potatoes are tender.

Serve.

Notes

If you find the flavor too mild, substitute cream for cheese sauce and part of the mozzarella with sharp cheese.

Substitute sage with other herbs such as marjoram, oregano, rosemary or thyme.

To prepare layered leeks and potatoes French style, omit mozzarella, sage and garlic, and substitute light cream with blue cheese sauce.
