Easy miso ramen

A ramen soup with a miso and soy sauce flavored broth, served with assorted toppings.

Ingredients

1 package ramen (8 oz pack )
1 dash garlic (or to taste, peeled and grated)
1 teaspoon ginger (freshly grated ginger)
2 teaspoons tamari
2 tablespoons miso (red miso paste)
1 tablespoon nori (or wakame, shredded)
1 pinch chili powder (optative)
1 pint water (boiling water for the broth, more to cook the ramen)
1 teaspoon sesame oil
6 onion (spring onions, thinly sliced)

Instructions

Heat plenty of water in a pot and add the ramen noodles when it comes to a boil. Wait for the water to return to a boil, turn off the heat, and wait 6 minutes until they are soft. Drain them, rinsing with cold water, and put them back in the pot.

Heat the water in a saucepan until it reaches the boiling point. Add the garlic, grated ginger, and soy sauce, if using. Let them boil for 3-5 minutes. Strain the broth.

Mix the miso paste, seaweed, and ground chili, if using, with the strained broth. Stir to mix the miso paste well. Pour this broth over the cooked ramen.

Distribute the soup into individual bowls, sprinkle sesame oil and green onions on top. 

Add other toppings as desired and serve the ramen hot.

Notes

Vegetable, meat or fish broth can be used instead of water.

Almost anything can be used as a topping. try:

  • Boiled eggs, peeled and cut in half.
  • Baby spinach.
  • Sesame seeds, white or black.
  • Strips of cooked meat.
  • Cooked prawns.
  • Sweet corn.
  • Chiles cut into strips.
  • Bean sprouts
  • Sautéed mushrooms or vegetables
  • Tofu
