Conch soup (Bahamas)

This is a rich, flavorful seafood soup made with tender conch, fresh vegetables, and typical Caribbean seasoning. This comforting and hearty soup is packed with island flavors.

Ingredients

2 cups conch (conch meat, pounded until tender and diced)
5 cups liquid (water or seafood broth)
2 tablespoons olive oil
2 onion (peeled and chopped)
2 celery (chopped)
1 bell pepper (red, chopped)
2 pinches thyme (dried thyme)
2 cloves garlic (finely chopped)
  seasoning (salt and ground black pepper to taste)
1 tablespoon wine (optional, dry white wine)

Instructions

Put the punded conch and water in a pan nad heat over medium heat. Boil the conch 20 minutes.

In pan apart, heat the oil and sauté the onion and garlic 1-2 minutes. Add bell pepper and celery and cook until just tender, 6-8 minutes.

Add to the conch. Season with thyme, salt and pepper. Simmer until the conch is very tender, 30 minutes more.

Check the seasoning and serve warm.

Notes

Place the pounded conch in a bowl with lime juice and let it sit for 10 minutes to tenderize even more.

You can serve the soup with dumplings.

Variations

Add vegetables to the pot.

Substitute fresh conch with fresh calamari or a firm white fish. Adjust cooking time.
