Zesty orange chicken

Healthy and easy. The combination of orange and garlic is surprisingly umami.

Ingredients

4 pieces chicken (skinless, boneless chicken breast)
1 orange (the zest from the orange and 4 slices)
1⁄4 cup orange juice
2 tablespoons parsley (fresh leaves, chopped)
1⁄2 teaspoon oregano (dried)
1 clove garlic (peeled and crushed)
1 tablespoon cooking oil (best olive oil)

Instructions

  1. Heat the oven to 325°F.
  2. In a large bowl mix the orange juice, orange zest, parsley, oregano and garlic. Add a little salt and pepper if desired.
  3. Place the chicken breasts in a non-stick baking pan and make 3 to 4 slashes on the top of each breast.
  4. Pour the marinade over the top and then top each breast with an orange slice.
  5. Cook approximately 20 to 30 minutes or until cooked through.
  6. Discard orange slices and serve.

Notes

Serve with a side of steamed asparagus and steamed baby potatoes, with a little butter, or with a side of wild rice and French green beans.
