Wattleseed muffins

Wattleseed muffins are a delicious addition to both breakfast and tea time. The incorporation of wattleseed gives them a unique, slightly nutty flavor that balances with the natural sweetness of the ingredients. 

Ingredients

2 cups flour
1⁄2 cup sugar
2 teaspoons baking powder
1⁄4 cup wattleseed
1 cup milk (whole milk)
1⁄2 cup vegetable oil (sunflower oil is good)
2 egg (medium sized)

Instructions

Heat the oven to 350°F and grease a muffin tin.

Combine the flour, sugar, baking powder and wattleseed in a bowl.

In another bowl, mix the milk, oil and eggs. Add to the dry ingredients.

Fill the muffin tins and bake for 25 minutes.

Let them cool 10 minutes before removing them from the tin.
