Tuscan dinner

Sautéed beans with all the Tuscan flavor to make your low GI diet more palatable.

Ingredients

2 tablespoons olive oil
1 1⁄4 cups zucchini (peeled and chopped)
1⁄2 cup celery (sliced)
1⁄2 cup bell pepper (red, diced)
1 teaspoon oregano (dried)
1 cup tomato (diced)
1 can beans (canellini beans, rinsed and drained, 15 oz can)
1 cup spinach (chopped)
1⁄4 teaspoon salt
1 pinch pepper (black pepper)
1⁄2 cup cheese (pre-shredded fat-free mozzarella cheese, about 2 oz)
2 sprigs rosemary

Instructions

Heat oil in skillet. Add zucchini and next 5 ingredients, sauté 10 min.

Stir in tomato, beans, and rosemary, cook 5 min.

Add spinach, salt, pepper to zucchini mixture. Cook until spinach wilts.

Sprinkle with cheese. Cover & let stand until cheese begins to melt.

Notes

Discard the rosemary sprigs before serving.

You can substitute cannellini bans with any white beans of your choice.
