Salata aswad

A Sudanese salad that goes great with pita bread and yogurt.

Ingredients

4 eggplant (diced or sliced, flash fried)
3 tablespoons cooking fat (preferably vegetable oil)
6 onion (spring onions, chopped)
2 bell pepper (green, chopped)
2 carrot (peeled and chopped)
4 tomato (rinsed, diced)
3 tablespoons parsley (fresh parsley)
1 clove garlic (peeled, crushed)
6 leaves lettuce (large leaves, rinsed)
1 lemon (the juice)
  seasoning (salt and pepper to taste)

Instructions

Except the lettuce leaves, mix the vegetables together then add the liquids and herbs.

On a plate place the lettuce leaves and spoon salad into the middle of each.
