Pumpkin fritters from South Africa

Serve pumpkin fritters from South Africa as a side dish, as they are, or as dessert, sprinkled with cinnamon sugar, caramel sauce on the side.

Ingredients

2 egg (beaten)
5 tablespoons flour (level)
2 teaspoons sugar
1 tablespoon sauce (caramel)
  cooking oil (for frying)

Instructions

Mix eggs, flour, cooked pumpkin and sugar to make a batter.

Heat oil in a pan. Drop spoonfuls of batter into the pan, without crowding the pan.

Cook until golden brown, about 2-3 minutes, flip and cook on the other side, about 1-2 minutes.

Notes

Pumpkin can be baked, our favorite method, or boiled, cut into chunks, and drained. Once cooked, mash with a fork or process with a blender. Mashed pumpkin should be thick, not too moist and runny.

Variations

Try this recipe substituting pumpkin with butternut squash or sweet potato.

To make cinnamon sugar, mix 3 tablespoons ground cinnamon with 6 tablespoons sugar. Store leftover cinnamon sugar in an airtight container.
