Kabak mücver (zucchini squash fritters)

Turkish pancakes made with grated zucchini, onion, herbs, cheese, eggs and flour.

Ingredients

3 zucchini (peeled and grated)
2 onion (peeled and grated)
1 tomato (peeled and finely chopped)
1 tablespoon dill (optional, chopped fresh dill)
1 tablespoon parsley (optional, chopped fres parsley)
1⁄2 teaspoon pepper
1 teaspoon salt
1 teaspoon mint (dried mint)
4 egg (lightly beaten)
3 tablespoons flour
  cooking oil (vegetable oil, for frying)

Instructions

Sprinkle the grated zucchini with salt and knead by hand to extract the liquid. Drain well.

Add onion, tomato, dill, parsley, mint, eggs, flour, salt and pepper. Mix well.

Heat oil in a frying pan. When the oil is hot, put tablespoons of the zucchini mixture, 4 or 5 at a time, and fry on both sides until golden.

Serve straight away.

Notes

The most popular herbs to add to these fritters are parsley and dill, or a mixture of the two.

1 tablespoon of chopped fresh mint can be substituted for 1 teaspoon of dried mint.
