Dill vinegar

Dill vinegar is very, very easy to prepare. Not only will flavor salads and pickles, bottle it in a nice container and it will make a great gift.

Ingredients

2 1⁄2 vinegar (white wine vinegar)
1 sprig dill (fresh dill )
2 tablespoons dill (dill seed)

Instructions

Pour the vinegar into a jar or bottle, add dill seed and leaves.

Close tightly with a cork. Let it steep for two weeks.

Strain the flavored vinegar into a sterilized jar. Use as dressing.

Notes

The same procedure can be used to make other herb infused vinegars. The most popular are the ones with some anise flavor in them, try to make a fennel or tarragon vinegar.

Equally, vinegar can be flavored with spices. Why not try a chili vinegar?
