Carrot, celery and onion casserole

A delicious vegetable side dish. Substitute butter with 2 tablespoons vegetable oil for a strict vegetarian diet.

Ingredients

1⁄2 pound carrot
1⁄2 head celery
2 tablespoons butter

Instructions

  1. Melt butter in a frying pan, add onion and cook for 4-5 minutes.
  2. Incorporate carrots and cook for a further 3-4 minutes before finally adding the celery.
  3. Cover and cook over moderate heat for 25 minutes, or until vegetables are tender, stirring occasionally to prevent sticking. Add a little water if necessary.
  4. Season with salt and pepper to your taste and serve.

Notes

Serve this carrot, celery and onion casserole on the side of some fried tofu slices.

This vegetable dish goes equally well with meat, chicken, fish or ham.
