Black eyed pea salad

Ingredients

3⁄4 c onion (chopped onion, mix of white and red onion)

2 T vinegar (red wine vinegar is best)
2 t mustard (or o taste, Dijon mustard)
1 t salt
1⁄2 t pepper (freshly ground black pepper)

Instructions

In a large bowl, combine the black-eyed peas, onion, celery, green bell pepper, red onion, and cilantro.

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.

Pour the dressing over the black-eyed pea mixture and toss to coat.
Serve chilled or at room temperature.
