Fajitas

Beef steak should be sirloin, flank, or round. Pickled jalapeño peppers should be chopped and may be omitted if not desired.

Chimichangas

Serve with almond red sauce and jalapeño cream sauce. Prepare the sauces and reserve while cooking chimichangas. Traditional Mexican garnish such as shredded lettuce and cheese, sour cream, guacamole also go well with chimichangas.

Mole from Mexico

The basic ingredients are straightforward enough, though some of them may require a bit of digging to locate. There's quite a bit of preparation to make a fine mole, but the effort is worth it, as a taste of the results will prove.
