Turkey Reuben's on rye bread sandwich

Prepare this sandwich with sliced roasted turkey leftover meat or with your favorite turkey meat from the deli counter.

Ingredients

12 slices bread (rye bread)
8 tablespoons mayonnaise
8 slices turkey (cooked)
8 slices cheese (Cheddar)
8 tablespoons relish (your favorite, if no chutney)

Instructions

  1. Spread 8 slices of bread with the mayonnaise.
  2. Top four of them with of turkey meat - season with salt and pepper if needed, and the other four with cheese and one heaped tablespoon of relish.
  3. Place one chese covered slice of bread on top of other with turkey, finishing with one plain slice of bread, to make double decker sandwiches. Press down firmly.
  4. Serve.

Notes

Experiment with different kinds of bread. What about pumpernickel bread?

Another way to enliven the flavor is to use different kinds of cheese. Try gruyere or Monterrey jack.

Try thousand islands salad dressing instead of mayonnaise and sauerkraut instead of relish.
