Tomato marmalade

Did you know you can make tomato marmalade?

Ingredients

10 cups tomato (ripe tomatoes, peeled and chopped, about 5 pounds whole tomatoes)
2 orange (medium sized)
4 pieces cinnamon (cinnamon sticks, 2 1/2 inch long each)
1 tablespoon clove (whole cloves)
5 allspice (whole)
5 1⁄2 cups sugar
1 teaspoon salt

Instructions

  1. Drain the tomato, and slice the oranges and lemon very thin, quarter and remove any seeds.
  2. Using a cheese cloth, tie up the spices.
  3. Mix the tomatoes with sugar and salt in an 8 qt saucepan, stirring well. Then add the spice bag and the orange and lemon slices.
  4. Bring to a boil, stirring only occasionally. Cook for 45 minutes. Skim off any foam.

Notes

Use it as spread or to accompany other dishes. The tomato marmalade sweet flavor goes well with roast or grilles dishes, especially poultry and pork.
