Sweet potato casserole (Bahamas)
A delightful blend of creamy mashed sweet potatoes, butter, sugar, cream, eggs, and warm spices like cinnamon and allspice. Baked until set and optionally topped with toasted mini marshmallows, this dish offers a harmonious balance of sweetness and spice.
Ingredients
Instructions
Place whole sweet potatoes in a pan, cover with water. Boil the sweet potatoes until tender, 30-40 minutes depending on size.
Heat oven to 350ºF. Grease a baking dish.
Drain, peel and place into a bowl. Mash well. Stir in butter, sugar, cream, beaten egg and spices. Mix well.
Spread the mash into the prepared baking dish and bake until set, 30-40 minutes.
If using marshmallows, remove from the oven and sprinkle the marshmallows over the top. Return to the oven until the marshmallows are lightly browned, 5-10 minutes more.
Remove from the oven and serve warm.
Notes
Traditionally served alongside savory mains such as roasted meats or poultry, this casserole complements dishes like jerk chicken or glazed ham.
Variations
Incorporate crushed pineapple or shredded coconut into the sweet potato mixture for an added layer of flavor, giving it a unique Caribbean flair.
Sprinkle chopped pecans or walnuts on top before baking to introduce a crunchy texture that contrasts with the creamy filling.
