Roasted apples with blueberries and oats

A fine sweet dessert that combines the healthful properties of apples, blueberries and nuts. Consider it a light version of an apple crisp.

Ingredients

1 ounce pecan nuts
2 tablespoons brown sugar
6 tablespoons orange juice
4 apple (large baking apples, cored and deseeded)
2 ounces blueberries
1 ounce oats

Instructions

Preheat the oven to 325° F.

Place the pecans, oats, blueberries and sugar in a bowl and mix together.

Score the apples. Fill the apples with the mixture and then pour orange juice over the tops.

Bake approximately 30 to 40 minutes until the apples are soft and golden.

Notes

Using a sharp knife score around the middle of each apple. Don't cut through but just cut around so that the apple doesn't collapse when baking.
