Queso blanco dip from Mexico

Queso blanco means white cheese and, not surprisingly, this dip is made with cheese.

Ingredients

1 cup cheese (Monterrey Jack, Asadero, o Chihuahua cheese)
4 chili pepper (green chiles)
2 tablespoons onion (finely chopped)
2 teaspoons cumin
1⁄2 teaspoon salt
1 chili pepper (jalapeño or serrano chili, finely chopped, optional)
1 tablespoon coriander (fresh coriander leaves, finely chopped)
1⁄4 cup cream (light cream or half and half)

Instructions

  1. Using a double boiler over medium heat, add all the ingredients.
  2. Cook, stirring occasionally, until fully melted and well blended.
  3. Serve warm.
