Prune compote with Port orange sauce

A simple fruit compote becomes classy and oh-so-delicious with the help of a port wine and orange sauce.

Ingredients

1 orange (non waxed, zest and juice optional)
2 tablespoons nuts (toasted and chopped)
1 cup sugar
1 cup water
1 pound prunes (pitted)
1 cup wine
3 cups ice cream (vanilla or hazelnut flavor)

Instructions

  1. Prepare light syrup by simmering 1 cup sugar in 1 cup water for 5 minutes.
  2. Mix 1 cup light syrup with the port wine and simmer the prunes for 15 minutes in this liquid. let the prunes cool down and marinate in the same liquid for at least 12 hours.
  3. Simmer the orange zest in 1/3 to 1/2 cup light syrup for about 10 minutes or until tender.
  4. Distribute the prune compote and port sauce among the serving plates and garnish with the cooked orange zest.
  5. Place 1 ball ice cream on each plate and sprinkle some chopped toasted nuts on top.

Notes

For even more orange flavor, add the juice of the orange to the port and syrup mixture in which the prunes will cook.
