Plum ketchup

Goes well with grilled duck, roasted wild boar, pork sandwiches, fried chicken.

Ingredients

4 pounds plums (ripe plums, pitted)
2 onion (medium size, finely chopped)
1 cup sugar (white sugar)
3⁄4 cup brown sugar (dark brown sugar)
1 1⁄2 teaspoons salt
1 1⁄2 teaspoons cinnamon (ground)
1 1⁄2 teaspoons mustard (powder)
3⁄4 teaspoon nutmeg (freshly grated or ground)
1⁄2 teaspoon clove (ground)
1⁄4 teaspoon allspice (ground)
1 3⁄4 cups vinegar (cider vinegar)

Instructions

In a stainless steel pot, cover the plums and onions with about a half inch of water, and bring to a boil.

Reduce heat and simmer for 20 minutes, until tender. Drain

Add the remaining ingredients to the plums and onions, and simmer for up to 2 hours, until thick.

Notes

As there are a wide variety of plums with different colors, plum ketchup can be yellow, green, red, or purple, depending on the plums used. The most appetizing ketchup is produced with red plums.
