Indian fried bread

One of the many kinds of bread in India. Apt for vegetarians and easily adapted for the most strict vegan.

Ingredients

4 cups flour (1/2 whole wheat flour, 1/2 all purpose)
1 teaspoon salt
1 teaspoon sugar
2 teaspoons baking soda
2 teaspoons cumin (cumin seeds)
2 teaspoons mustard (mustard seeds)
1 tablespoon fennel (fennel seeds)
1 pound yogurt (natural yogurt)
6 tablespoons ghee
5 tablespoons sunflower oil

Instructions

  1. Mix together the first 8 ingredients. Add yogurt a little at a time until the mix becomes a firm ball of dough. Cover and chill for 2 hours -if the dough is too dry, add a little cold water.
  2. Divide the chilled dough into 24 pieces. roll out each piece into a thin round. Stack them and keep them under a dish towel as you work.
  3. Fry the dough in a large skillet with hot ghee. Start with only a quarter of the ghee and add more as needed. drain on towel.

Notes

A mix of equal amounts of whole wheat and plain flour works best. 

Yogurt and ghee can be substituted for a vegan version.
