Gooseberry ketchup

Gooseberry ketchup goes well with hotdogs and hamburgers.

Ingredients

5 pounds brown sugar
8 pints vinegar
2 tablespoons cinnamon
1 teaspoon clove
3 nutmeg (grated, 3 hole nutmegs)
1 tablespoon allspice
10 pounds gooseberry

Instructions

  1. In a large heavy bottom pan, boil the vinegar, half of the sugar and berries until the berries are very soft.
  2. Run through a food mill, reserving the liquid.
  3. Mix the liquid with the remainder of the sugar and the rest of the ingredients.
  4. Return to heat and simmer until desired thickness.
