Creole sausage

Creole sausage is nice for breakfast and easy to prepare in the caravan or over camp fire.

Ingredients

2 pounds pork (ground lean pork meat)
1 pound pork (ground fatty pork meat or bacon)
1 clove garlic (minced very fine)
1 onion (large, minced very fine)
1 tablespoon salt
2 teaspoons hot pepper sauce
2 teaspoons pepper (coarsely ground black pepper, freshly ground)
1 teaspoon thyme (ground thyme)
1 tablespoon parsley (dried parsley leaves)
1 leaf bay leaf (crushed)
1⁄4 teaspoon allspice
  cooking fat (or coking oil, for frying the sausages)

Instructions

  1. Mix together all the ingredients for the sausage in a large bowl.
  2. Form into patties.
  3. Heat oil in a skillet or frying pan, just enough to cover the bottom.
  4. Fry the patties until crisp but not dry, about 2 minutes each side.
  5. Serve warm.

Notes

This patties can be prepared in advance and frozen. Defrost before frying.
