Carolina's rockin red sauce

A delicious barbecue sauce from North Carolina.This marinade was the runner up for the Seasonal Recipe contest with the topic Complement your Barbecue, promoted by Food Naturally

Ingredients

1 cup canola oil (or other vegetable oil)
12 tablespoons tomato ketchup (Melinda recommends Heinz tomato ketchup)
12 tablespoons soy sauce
4 tablespoons vinegar (apple cider)
2 teaspoons brown sugar
1 teaspoon pepper (freshly ground black pepper)
3 teaspoons garlic (minced)
1 teaspoon cumin (ground)

Instructions

  1. In a 13x9 inch baking dish add oil, ketchup, soy sauce, vinegar, sugar, pepper, garlic and cumin whisk well.
  2. Add the London broil or any beef or chicken, pork or fish to the mixture using a fork poke many holes in roast and continue to roll on both sides until completely covered.
  3. Now cover the meat with plastic wrap and refrigerate for around 4 hours; however, overnight is best. Be sure to turn every so often to marinate both sides.
  4. Place meat on a hot grill and grill as usual.

Notes

Veredict: flavorful and deliciously sweet, still with some zing. This marinade will appeal to people who does not relish hot sauces, definitively a winner.
