Banana and mango ketchup

Sweet and tangy, it will enhance any roast pork and many other pork recipes.

Ingredients

1 banana (very ripe, peeled and coarsely chopped)
2 mango (peeled and coarsely chopped)
1⁄2 cup onion (sweet onion, diced)
1 tablespoon tomato paste
1 clove garlic (chopped)
1 teaspoon salt (kosher salt)
2 tablespoons brown sugar (light brown sugar, packed)
1 tablespoon molasses
1⁄4 cup vinegar (balsamic vinegar)
1 tablespoon Worcestershire sauce
1⁄2 teaspoon chili pepper (chipotle chili, ground)
1⁄4 teaspoon ginger
1 teaspoon cinnamon (ground)
1 teaspoon allspice (ground)
1⁄4 teaspoon nutmeg (grated)
1⁄4 teaspoon clove (ground)
1⁄2 cup water

Instructions

  1. Using a food processor, puree the first 10 ingredients.
  2. Place the puree into a large saucepan, add the remaining ingredients. Bring to just a boil, reduce heat and simmer for at least 15 minutes. Be sure to stir often.
  3. Remove from heat, cool before serving or placing in fridge.
