Apple, nut and raisin cake

Those on a milk free diet don't need to give up on cakes and baking. This recipe uses sunflower oil instead of butter.

Ingredients

1⁄4 cup sunflower oil (or other flavorless vegetable oil)
1 cup sugar
2 cups flour
1⁄2 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon cinnamon (ground)
2 tablespoons raisin
3 apple (medium size, peeled, cored and cut)
1⁄2 cup walnut (already shelled, roughly chopped)

Instructions

  1. Preheat oven at 350° F (175° C)
  2. Mix sugar and oil until well blended. Add flour, vanilla, cinnamon, one by one, stirring until blended each time. Add walnuts, raisins and apples, mix to distribute evenly.
  3. Pour into a greased baking pan and bake 45 minutes in the middle of the oven.

Notes

Try othter nuts, lightly toasted, such as hazelnuts, almonds or pecans. Substitute raisins with other dry fruit, dried cranberries or blueberries, chopped prunes or apricots, and see what you get. What about a pear, raisin and nut cake?
