Milk Steaming and specialty drink creation
One of espresso's greatest advantages is its versatility as a base for milk-based specialty drinks. Proper milk steaming technique transforms ordinary espresso into cappuccinos, lattes, flat whites, and countless other beverages. The key to exceptional milk drinks lies in creating microfoam, tiny, velvety bubbles that integrate seamlessly with milk to create a creamy, sweet texture.
Begin with cold milk (preferably whole milk for best results) in a clean, cold pitcher. Insert the steam wand just below the milk's surface and turn on full steam. The initial phase creates foam by introducing air into the milk—you'll hear a paper-tearing sound as air incorporates. After creating sufficient foam volume, plunge the wand deeper to heat and texture the milk without adding more air.
The ideal steaming temperature reaches 140-150°F, at which point the pitcher becomes too hot to touch comfortably.
