Welsh Cakes

Welsh cakes are a type of skillet or griddle cakes, or drop scones, very well liked by children. Sprinkle with caster sugar before serving.

Ingredients

1⁄2 cup butter
1⁄4 cup sugar
1 egg (beaten)
1⁄2 cup currants
1 pinch mixed spice
1 1⁄2 cups flour
1 teaspoon baking powder

Instructions

Knead the butter into the flour until a breadcrumb consistency appears.

Mix in the sugar, currants, mixed spice and egg until forming a uniform dough.

Roll the dough until 1/4 inch thick then cut out circles using all the dough.

Cook the shapes on a griddle for 2-3 minutes on each side before sprinkling with caster sugar and serving.

Notes

You can use one cup self-raising flour and omit baking powder.

Do you like them light? Sift the flour before rubbing with butter.
