Vietnamese pumpkin soup (canh bí đỏ)

A traditional Vietnamese pumpkin soup that is simple to prepare. While the core ingredients often include pumpkin and either pork or shrimp, there are several variations that reflect regional tastes and personal preferences. 

It is a very versatile dish. The beauty of canh bí đỏ lies in its adaptability. Home cooks often experiment with different herbs, spices, and additions, creating new versions that suit their tastes and dietary needs. Each variation tells its own story, reflecting the ingenuity and culinary heritage of Vietnamese cuisine.

Ingredients

1 pumpkin (medium sized, peeled and cut into cubes)
1⁄4 lb tofu (diced)
2 clv garlic (peeled, minced)
1 T soy sauce (optional)
4 c broth (vegetable broth)
  seasoning (salt and pepper to taste)
1 bn coriander (optional, as garnish, small bunch of fresh coriander)
1 bn green onion (optional, as garnish, small bunch, chopped)

Instructions

In a large pot, heat the vegetable oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Add the pumpkin cubes to the pot and cook for 2-3 minutes. Pour in the vegetable broth. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, until the pumpkin is tender.

Add the tofu cubes to the pot. Stir in the soy sauce, salt, and pepper. Continue to simmer for another 5 minutes to allow flavors to blend.

Served hot, straight from the pot. Top with chopped cilantro and green onions just before serving.

Notes

Pair with steamed jasmine rice for a complete meal. Serve with a side of pickled vegetables for added crunch and flavor.

Variations

Season with a little fish sauce. A squeeze of lime juice can add a zesty twist.

Add other vegetables or mushrooms for more flavor and texture.

Vegetarian canh bí đỏ: In this variant, the dish becomes a vegetarian delight by replacing meat with tofu and enhancing the broth with vegetable stock, making it both light and nourishing.

Traditional canh bí đỏ with shrimp: This classic version features succulent shrimp, perfectly balancing the sweetness of pumpkin with the delicate brininess of shrimp.
