Vegetarian fish sauce

No need to give up your Indonesian feast just because one of your guests is a very strict vegetarian. Use this vegetarian version of fish sauce and go on with the menu.

Ingredients

1⁄3 cup soy sauce
1 1⁄2 teaspoons vinegar (rice vinegar)
4 tablespoons bean (fermented black beans, made into a paste)

Instructions

  1. Mix thoroughly all ingredients into a bowl.
  2. Allow to stand for 20-25 minutes.
  3. Strain through a sieve before serving.

Notes

To make fermented black bean paste, mash the beans through a coarse sieve or garlic press.

This sauce can be used as a substitute for nuoc mam chay or other Asian fish sauces.
