Suya
Suya of skewered and grilled spicy meat. It is often made with beef, chicken, or even fish and is marinated in a special blend of spices known as suya spice.

Preparing the meat
Place the thinly sliced beef in a large bowl.
Add the suya spice and mix well, ensuring the meat is well coated.
Cover the bowl and marinate for at least 2 hours, or overnight for best results.
Grilling the meat
Preheat your grill to medium-high heat.
Thread the marinated beef strips onto the skewers.
Lightly brush the skewers with vegetable oil.
Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the meat is cooked to your liking.
Remove from the grill and sprinkle some more Suya spice over the top for extra flavor.
Serving
Serve the suya skewers hot, garnished with sliced onions and tomatoes. You can also serve it with a side of spicy pepper sauce and fresh lime wedges for an extra kick.
Notes
Serve with Jollof rice or fried plantains for a complete meal.
Preparation time does not include resting time.
Suya spice
To make suya spice, mix well 1/4 cup ground peanuts; 2 tablespoons cayenne pepper; 1 tablespoon paprika; 1 tablespoon ground ginger; 1 teaspoon garlic powder; 1 teaspoon onion powder; 1 teaspoon salt; 1/2 teaspoon ground white pepper.
Variations
You can use chicken, lamb, or fish instead of beef.
Add some sliced bell peppers and onions between the meat pieces on the skewers for added flavor and color.
