Smothered green beans with potatoes and sausage

Fresh green beans simmered with baby potatoes, and smoked sausage in a savory, well-seasoned broth. Onions, garlic, and a touch of seasoning bring everything together in a dish that’s both homey and flavor-packed. Serve as a main or a hearty side.

Ingredients

1 pound green beans (trimmed)
4 potato (medium sized, cunt into bite-seized chunks, skin on of off)
12 sausage (smoked sausages, sliced)
1 onion (medium sized, peeled and chopped)
3 cloves garlic (peeled and minced)
2 cups broth (better low sodium)
2 tablespoons cooking fat (bacon drippins or olive oil)
1 teaspoon seasoning (Cajun or Creole seasoning)
1⁄2 teaspoon pepper (ground black pepper)
1⁄2 teaspoon paprika (smoked paprika)
  salt (to taste)

Instructions

In a large skillet or Dutch oven, heat olive oil (or bacon grease) over medium heat. Add the sliced sausage and cook until browned on both sides (about 5–7 minutes). Remove and set aside.

In the same skillet, add onions and cook until translucent, about 4–5 minutes. Add garlic and sauté for another 30 seconds.

Add potatoes to the skillet and stir to coat in the onion and garlic mixture. Pour in the chicken broth, and bring to a simmer.

Stir in the Cajun seasoning, smoked paprika, black pepper, and a small pinch of salt. Add the green beans and return the sausage to the skillet.

Cover the pot with a lid and reduce heat to low. Simmer for 30–35 minutes, or until the green beans and potatoes are tender and most of the liquid is absorbed.

Remove the lid and taste for seasoning. Add more salt, pepper, or hot sauce if desired. Let sit uncovered for 5 minutes before serving to allow flavors to settle.

Notes

Want to elevate the flavor? Start by rendering diced bacon before cooking the sausage, and use the drippings throughout the recipe.

For more color, add diced red bell pepper with the onions for sweetness and color.

This dish reheats beautifully the next day.

Variations

Add a dash of hot sauce or red pepper flakes for heat.

For a vegetarian version, swap sausage for plant-based sausage and use veggie broth and olive oil, just amp up the seasonings.
