Red cabbage with onions and apples

The addition of lemon juice gives this recipe a tangy side, different from the traditional vinegar.

Ingredients

2 tablespoons butter (or vegetable oil)
1 onion (large, chopped)
1 head cabbage (small, red cabbage, shredded)
2 apple (eating apples, cored and cut into 8 wedges)
1⁄2 teaspoon mixed spice
1 lemon (juice only)
  salt (to taste)
  pepper (to taste)

Instructions

  1. Heat the butter in a pan over medium heat until melted. Add the onion and cook for 5 minutes.
  2. Add the rest of the ingredients to the pan. Cover and cook over a moderate heat, stirring occasionally, for 30 minutes.
  3. Transfer to a serving dish and serve hot.

Notes

Both peeled or unpeeled apples work for this recipe.

Substitute butter with vegetable oil and this recipe will be good for vegans and the strictest vegetarian diets.
