Quick tomato and basil sauce

A tomato sauce is ideal for pasta or vegetable pie. This sauce is light and can be served in the warmer season.

Ingredients

1 pound tomato (washed and chopped)
1 tablespoon basil (fresh leaves, coarsely chopped)
1 teaspoon olive oil (extra virgin)
1⁄2 teaspoon sugar
  seasoning (salt and white peper to taste)

Instructions

  1. Place tomatoes, olive oil, basil, sugar and a pinch of salt in a microwave proof container.
  2. Cook in the microwave oven, on high, for 6 minutes. Stand for 2 minutes.
  3. Process in the blender until smooth, press through a coarse sieve if neede, and season.
  4. Serve with a drizzle of extra virgin olive oil.

Notes

Use a low and wide glass container, suitable for the microwave.

If you don´t have them, substitute 1 lb fresh tomatoes with 1 can (1 lb)  chopped tomatoes or 2 cups passata.

Use a coarse sieve if there are bits of skin left.

For a diabetic diet: Although it is only a small amount, omit the sugar if you are concerned or your diet is very restrictive.
