Potted turkey

One way to recycle leftover turkey meat.

Ingredients

2⁄3 cup turkey (cooked, finely chopped)
1⁄3 cup butter
2 teaspoons mustard
  seasoning (salt and pepper to taste)
1 tablespoon wine (Port wine)

Instructions

  1. Mix the turkey meat, half the butter, the mustard and the port in a blender or food processor until it makes a very coarse puree. Season to taste.
  2. Distribute into four individual dishes.
  3. Melt the other half of the butter and pour it on top of the potted turkey.
  4. Chill for 1 hour or until required.

Notes

Serve with toast and salad.

To use excess roasted chicken meat, try this recipe substituting cooked turkey meat with cooked chicken.
