Kir Royale cocktail
The Kir Royale is a classic cocktail with a festive, elegant feel. It is made with sparkling wine and crème de cassis, a blackcurrant liqueur that adds gentle sweetness, deep berry flavor, and a beautiful rosy hue. Simple to mix and lovely to serve, it is a natural choice for celebrations, holiday gatherings, or a relaxed aperitif before dinner.
The drink is closely linked to France and is often seen as the sparkling version of the Kir, a cocktail associated with Félix Kir, the former mayor of Dijon. While the two drinks are very similar, the difference is important: a Kir Royale is made with sparkling wine, while a Kir is the still-wine version, made with dry white wine instead.
Instructions
Use a chilled flute or sparkling wine glass if possible. A cold glass helps keep the drink crisp and lively.
Pour the crème de cassis into the glass.
Slowly pour in the chilled sparkling wine. Pour gently to keep the bubbles intact. Stir very lightly only if needed.
Add a fresh berry or a strip of lemon zest if you like. Serve at once while well chilled.

Variations
If you enjoy the flavor of Kir Royale but want a quieter, less festive version, make a Kir instead. The recipe is the same, but Kir uses dry still white wine in place of sparkling wine. Use a dry white wine, such as Bourgogne Aligoté or another crisp white wine.
