Irish whisky sour

Instructions
Shake whiskey, lemon juice, simple syrup, and egg white (if using) without ice to mix.
Add ice and shake again.
Strain into a glass over fresh ice and garnish.
Notes
Serve in a rocks glass over a large ice cube for slow dilution. Garnish with a lemon slice and a maraschino cherry for a classic touch. For an elegant finish, add a few drops of Angostura bitters on top of the frothy layer.
Add more or less simple syrup depending on your preference.

Use high-quality Irish whisky.
Shake twice for the perfect froth. First shake without ice (dry shake) to emulsify the egg white, then shake again with ice to chill.
