Iced Einspänner

The iced Einspänner is a fresh, modern take on the classic Viennese coffee drink very popular in South Korea. Instead of hot black coffee topped with whipped cream, this version pairs cold brew or an iced Americano with a thick, sweet cream layer that floats beautifully on top. It is cool, rich, and striking in the glass, with each sip pulling bold coffee through velvety cream. For the best experience, do not stir.

Ingredients

4 fluid ounces coffee (strong cold brew coffee or iced Americano)
  ice (ice cubes, as needed)
1⁄3 cup cream (cold heavy whipping cream)
1 tablespoon condensed milk (sweetened condensed milk)
1 tablespoon milk (whole milk)
  cocoa (unsweetened cocoa powder, for garnish)

Instructions

In a small bowl, combine the heavy whipping cream, sweetened condensed milk or vanilla syrup, and whole milk. Whisk or froth until the mixture thickens but stays pourable. It should have the texture of melted ice cream, not stiff whipped cream.

Fill a clear glass about halfway with ice cubes. Pour in the cold brew or iced Americano, leaving about 1 1/2 inches of space at the top for the cream layer.

Hold a spoon upside down just above the surface of the coffee. Slowly pour the cream mixture over the back of the spoon so it settles into a thick layer on top of the coffee rather than mixing in right away.

Dust the top lightly with cocoa powder. Serve at once, and do not stir.

Iced Einspänner variations

For a pistachio Einspänner, whisk 1 tablespoon pistachio paste into the heavy cream mixture until smooth. If needed, add 1 teaspoon vanilla syrup to help sweeten and loosen the cream slightly. Garnish with chopped pistachios instead of cocoa powder, or use both for a richer finish.

For a uji matcha Einspänner, In a small cup, whisk 1 1/2 teaspoon Uji matcha powder with 1 tablespoon hot water until smooth. Pour the matcha into the glass with the cold brew or iced Americano and ice. Add 1-2 teaspoons of vanilla syrup to the cream mixture if you want a sweeter finish. Dust the top lightly with matcha powder instead of cocoa powder.

For a strawberry matcha Einspänner, whisk 2 tablespoons of strawberry purée or syrup into the cream mixture. In a small cup, stir 1 teaspoon Uji matcha powder with 1 tablespoon hot water until smooth. Pour the matcha into the cold brew or iced Americano before adding the ice, then continue with the recipe. Garnish with freeze-dried strawberry crumbs, a light dusting of matcha, or both.

For a black sesame Einspänner, whisk 1 tablespoon sesame paste into the cream mixture until fully blended. Add 1 extra teaspoon sweetened condensed milk if you want a sweeter, smoother cream. Garnish with black sesame seeds instead of cocoa powder, or use both for contrast.

Notes

You will also need a clear glass; a small bowl or measuring cup; a whisk, milk frother, or hand mixer and a spoon.

Substitute the sweetened condensed milk with the same amount of vanilla syrup if desired.

If the cream becomes too thick, add a small splash of milk and whisk again.A splash of whole milk helps keep the cream smooth and cascading instead of too stiff.

Variations

What began as a striking Korean café adaptation of the Viennese Einspänner quickly opened the door to a whole family of variations. Once the format shifted from hot black coffee and whipped cream to an iced, layered drink with a thick sweet cream topping, it became remarkably adaptable. Café culture did the rest. Pistachio brought nuttiness and richness, strawberry matcha added color and softness, Uji matcha introduced a more refined tea-driven profile, and black sesame contributed depth and roasted complexity. These variations do not replace the original idea so much as expand it.
