Hot ginger sauce

This thick, dark, rich & spicy sauce goes well with as a dipping sauce with bland foods such as tofu.

Ingredients

1⁄4 cup ginger (fresh, fiinely chopped)
1 chili pepper (stemmed, finely chopped)
2 tablespoons vinegar (rice wine vinegar)
1 tablespoon garlic (minced)
1 tablespoon sugar
1 tablespoon soy sauce
3 sprigs coriander (fresh leaves, finely chopped)
2 tablespoons bean paste (brown bean paste)

Instructions

  1. Mix all ingredients thoroughly.
  2. Use immediately.

Notes

Use immediately or at least within 6 hours of preparation as the flavors will get stronger the longer the sauce sits.

Use a Serrano chili pepper with this recipe for an example of fusion cooking. East meets West in this hot ginger sauce.
