Fish sauce

This is not the fish sauce so popular in South East Asia which is made of salted anchovies, fermented, but an easy sauce to make at home.

Ingredients

1⁄2 cup soy sauce
6 tablespoons water
2 cloves garlic (grated or mashed)
1⁄2 teaspoon brown sugar

Instructions

  1. Place all ingredients in a sauce pan. Bring to the boil and simmer over a low-medium heat for 8-10 minutes.
  2. Strain into a bowl, pressing gently to get all the juices.

1 cup

Notes

Substitute 36 salted anchovy fillets with 6 tablespoons anchovy paste.

This home made sauce can be used as a substitute for other fish sauces.

Nam pla - Thai fish sauce.

Nuoc nam - Vietnamese fish sauce.

Shottsuru - Japanese fish sauce.

Patis - Filipino fish sauce.
