Couscous stuffing

Simple stuffing anyone would enjoy, including a vegan guest.

Ingredients

2 tablespoons margarine (sunflower margarine)
1 onion (small, minced)
2 cloves garlic (medium size, minced)
1⁄4 teaspoon cinnamon (ground)
1 pinch ginger (ground)
1 pinch turmeric (ground)
1 cup couscous (plain)
3 tablespoons currants
2 tablespoons lemon juice
  seasoning (salt and ground black pepper to taste)

Instructions

  1. In a medium sauce pan over a medium heat, heat margarine. Add the onion, garlic, cinnamon, ginger and turmeric, sautéing 3-4 minutes until onions are soft.
  2. Stir in the couscous, coat well and cook for 2 minutes.
  3. Add broth, bring to just a simmer and remove from heat.
  4. Cover and let stand 5 minutes. Fluff with fork.
  5. Add apricots and nuts, along with the parsley and lemon juice, stir until incorporated.
  6. Salt and pepper to taste.
