Cherries in syrup (as sauce)

This delightful treat can stand alone as a sumptuous dessert or be the star accompaniment to ice cream, pancakes, and more.

Ingredients

2 pounds cherries (firm and ripe, pitted and stemmed)
1 cup sugar (granulated sugar)
1 cup water
2 tablespoons lemon juice

Instructions

In a medium saucepan, mix together the sugar, water, and lemon juice. 

Place the saucepan over medium heat, stirring occasionally until the sugar is completely dissolved.

Once the mixture starts to simmer, reduce the heat slightly and let it cook until it reaches a light, syrupy consistency. This should take about 5-10 minutes. Be sure not to overcook the syrup, as this can result in a thick and sticky texture.

Remove the saucepan from the heat and let the cherries and syrup cool to room temperature. This cooling stage helps the cherries absorb the syrup beautifully.

Variations

Add a vanilla bean for more flavor. If you're using a vanilla bean, split it open and add it to the syrup mixture.

For more flavro, add 1/4 cup red wine to the boiling syrup . Alternatively, add 2 tablespoons cherry liquor or rum to the cherries once cooked.
