Bahamas barbecue chicken

The secret to this recipe is its simplicity. Once seasoned with the jerk spice mix, the chicken is grilled to perfection, capturing that unmistakable barbecue flavor while keeping the meat tender and juicy. The barbecue sauce adds a final touch.

Ingredients

3 pounds chicken (chicken pieces or a whole chicken cut into serving pieces)
  seasoning (jerk seasoning to taste)
  sauce (Bahamian barbecue sauce)

Instructions

Rub the chicken pieces with jerk seasoning and let stand at least 1 hour in the fridge.

Prepare the barbecue or grill. Place the chicken pieces on the grill, about 6 inches from the coals. Cover and cook until nearly ready, about 40 minutes, turning them a couple of times.

Brush the chicken with barbecue sauce. Grill until done, about 20 minutes more.

Once done, serve the chicken immediately, with the rest of the barbecue sauce in abowl on the side.

Oven bake

If grilling isn’t an option, bake the chicken in the oven at 375°F (190°C) for about 50 minutes, brushing with barbecue sauce during the last 20 minutes.

Notes

Add a sprinkle of freshly chopped cilantro or parsley for a pop of color and flavor.

Squeeze fresh lime or orange juice over the chicken before serving for a zesty flavor.

Add wood chips to the grill for a smoky, authentic barbecue taste.

Vegetarian Alternative: Use the same jerk seasoning and barbecue sauce on grilled tofu or portobello mushrooms for a plant-based version.
