Ajilimojili (Puerto Rico)

A dressing, dipping sauce, or marinade with olive oil, lemon or lime juice, garlic and other seasonings. Use with grilled meat or seafood.

Ingredients

1 chili pepper (optional, red chili, sliced)
2 bell pepper (red, seeds removed, chopped)
4 cloves garlic (peeled and roughly chopped)
1⁄2 teaspoon pepper (crushed peppercorns)
1⁄2 teaspoon salt (or to taste)
5 tablespoons lime juice (or lemon juice)
1⁄2 cup olive oil
4 tablespoons coriander (finely chopped)

Instructions

  1. Blend chili, if using, peppers, garlic, salt, peppercorns, and lime juice into a paste - or crush them into a paste with mortar and pestle.
  2. Mix in olive oil, a little at a time.
  3. Garnish with chopped coriander.

1 cup

Notes

Substitute lime juice with the same amount of lemon juice, vinegar, or a combination of the two. By all means, add more chili, if you like a hot sauce.

Other seasonings that work well with this sauce are ground cumin and dried oregano.
